Healthy Rocky Road

A healthy take on a classic rocky road recipe – it’s full of antioxidants and healthy fats and the best part is that you can add whatever suits your taste buds. This might be one of the easiest treats to whip up in no time! Plus you can wrap up the bars and give to friends and family as a little healthy treat.

SERVES: Serves 8-10


  • 200g dark chocolate (minimum 75% cacao)
  • ⅓ cup coconut oil
  • 1 ¼ cup roasted almonds
  • 1 ¼ cup macadamias
  • ½ cup pumpkin seeds
  • 1 cup unsweetened coconut chips
  • 1 tsp vanilla extract


Line an 8×8-inch pan with baking paper and set it aside.

In a heatproof bowl, combine chocolate and coconut oil. Heat over the double boiler and keep stirring until fully melted.

Take the chocolate mixture off the heat and fold in roasted almonds, macadamias, coconut chips, pumpkin seeds and vanilla extract (you can replace these with any nuts and seeds your soul desires – just make sure it all adds up to 4 cups).

Spread the mixture into prepared pan and refrigerate for at least 2 hours. Lift from the pan using baking paper, and cut or break into squares. This will last in the fridge for a couple of weeks unless eaten beforehand 😉
